Preparation Instructions:
For the first step in this Greek potato salad recipe, please chop up your fresh Vidalia onion. Next you will want to cut your peeled potatoes into small bite size cubes. Moving along, next take out a boiling pot full of water, and then add your chopped potatoes to it. Bring the water within the boiling pot to a boil over medium high heat, cooking your potatoes until they are nice and tender. Next drain your potatoes, and then add them to a large serving bowl, along with your chopped Vidalia onion. Next take out a mixing bowl, and whisk together the freshly diced parsley, fresh squeezed lemon juice, fresh ground black pepper, Greek extra virgin olive oil, fresh minced garlic cloves, and Celtic sea salt. Once your dressing is smooth and even, stir it into your potatoes until it's evenly disbursed throughout the salad. Lastly you will want to chill the salad for roughly two to four hours in the refrigerator before serving it. That concludes this wonderful Greek potato salad recipe, thanks again for checking it out.
