Preparation Instructions:
John from Auckland New Zealand sent us this yummy potato macaroni salad recipe. To get started, first you will want to peel your potatoes, and then place them in a boiling pot filled with water. Boil the potatoes until they are nice and tender, which should take roughly twenty minutes. Next you will want to take out another boiling pot, and boil your elbow macaroni until they're soft and done, which should take roughly ten to twenty minutes. Moving along, next take out a third boiling pot, and boil your eggs for about ten minutes. Once all of those tasty ingredients have been cooked, you will then want to chop up your potatoes and eggs, and then stir them together in a large salad bowl. Next stir in the cooked elbow macaroni, diced celery stalks, grated fresh carrots, diced spring onions, and boiled corn. Once you have an even distribution of ingredients, you will then want to move on to preparing your sauce. Take out a small mixing bowl, and pour into it the yellow mustard, real mayonnaise, Italian dressing, pickle relish, pickle juice, table salt, ground black pepper, and ground dill. Whisk your sauce together until it's creamy and consistent, and then stir it into your salad, stirring vigorously until all of the ingredients are coated with the sauce. Lastly you will want to refrigerate the salad for one to four hours before serving it, so that the flavors can blend together.
